December 13, 2023INGREDIENTS
For the salad
- 2 tangerines, peeled and sectioned
- 1 green apple, thinly sliced
- 1 cup shredded sweetened coconut
- 1/2 cup sliced almonds
- 3 cups of romaine lettuce
For the dressing
- 2 tbsp. freshly squeezed tangerine juice
- 2 tsp. red-wine vinegar
- 2 tbsp. olive oil
- Salt and pepper to taste.
DIRECTIONS

Preheat oven to 350 degrees. On a baking sheet, spread coconut and almonds in one layer. Toss once halfway through. Bake until golden. Set aside.

In a small bowl, whisk together the ingredients for the salad dressing. Let it sit for 10 minutes.

In a large serving bowl, add the lettuce, tangerines, apple, coconut and almonds. Drizzle with the dressing. Serve immediately.
